I honestly think you'll be fine. pulling a 7000lb trailer (Sled race trailer) with my old F350 was overkill. F150 pulls it just fine and I keep speeds under 65mph.
and it wont even be close to 7000. dry weight is 5385. I weighed every single item i put into my current TT and it only added up to 284 lbs. Honestly im not sure what people are doing that are adding 1000 lbs of stuff. I never travel with water. I personally dont see me even getting to 6000 wet.

Well the payload is the difference between the empty weight and gross, so it's unlikely you will come near it but on some trailers that only have a few houndhu lb of payload it is important.

Yeah, then I made the mistake to upgrade my wife's kitchenaid stand mixer for the house last year for her birthday........guess what, now the old one stays in the camper. Can't complain to much, I do enjoy the benefits of the mixer....lol.

To answer the OP, I think the boost would be fine for what your doing with it, that would be my vote. Hard to fine, but keep your eyes out for a boost with the HD package.

I'm sure my new EcoBoost could pull my "fulltime" tinyhouse just fine. But it'd take me forever to brake camp.
Just to pull the slide out (office) in would be a nightmare. (as you can see)
So I LIVE in one, and travel with one of the ones I keep in travel mode.

I'm pulling a 30 foot (close to 35 bumper to tongue) just under 9500 lbs (scale verified) Fox Valley (Canadian version of a Crossroads Cruiser). I have a 2012 Eco screw, 6.5 bed with tow max. My GCVW was 14498lbs loaded for 3 days. With my Equalizer hitch, it pulls great. I think you'll be fine.
