Oh yea...we have a local, state, and federally inspected licensed commercial kitchen in our home:) Bigger then a hobby but not big enough to be major work. Pays our taxes...a few vacations every year.....and now fun parts for PaPa's new mistress (truck). When we built our new house on our homestead we sacrificed a bedroom for this. We eat and drink very very well!

Just saw this, I do a bit of dabbling with cooking. :)
11x17 Flan, the flip is difficult but looks amazing when it doesn't crack :)

Smoked pork shoulders for pulled pork

two briskets - smoked for 20 hours

The finished reverse sear steak from previous picture :)

Sous Vide chuck roast, cooked at 135 for 48 hours then slathered with butter and seared on the grill

My standard thanksgiving day dinner, 2x16lb turkeys spatchcocked for quick cooking and a 7 bone standing rib roast, cooks in about 3.5 to 4.5 hours at 350

Pork belly cooked to 195 with homemade dry rub

Had to work in the kitchen yesterday....short notice order for Black Friday for a customer...PIA...but ok....my customers know we don't stock....made to order....always getter done though.....Jalapeno Cranberry Conserve, Whole Grain Cranberry Mustard, Cranberry Horseradish Mustard, and Whole Grain Garlic Mustard. How about some wine porn?:D 2 batches of Black Current (AC/DC) and a batch of Blueberry (Bay Blues)..... batches are right at 200 gallons.....2 more weekends and we'll be closed for the season.

Pot luck at winery for last day......4 Cheese Cakes for desert.....2 were made by a co-worker and 2 were made by the husband of another co-worker.....very yummy.....didn't have anything else...just 2 small pieces:cool:

Got some prime cowboy cut ribeye at a great price. Fixed them for the wife and I yesterday. I also got some fresh wild scallops that I pan seared, wife hates seafood so more for me. They also had twice baked potatoes, figured I'd make dinner easy by just doing the steaks. :)
I cooked both sous vide but wife likes medium vs medium rare so I took hers to 150IT in the oven at 225. Seared both on the grill to finish them off.

I too use the "reverse" sequence. Oven at 225 until meat hits 125. Take it out. Rest 15 minutes. (meat goes to about 135 after you take it out)

Then TORTURE the steak on superhot Cast Iron for about a minute each side.

I bet that's pretty close to replicating what you described?
I KNOW that steak you cooked tastes even better than it looks. :)

Basically the same except I sous vide mine for a couple of hours at 130
