For those of you that can actually see your real numbers.... What are you running at?
My 2018 F-150 3.5 EcoBoost engine temperature floats between about 208 - 216 degrees once the truck is warmed up. My transmission takes a bit longer to warm up and it floats between 200 - 210 degrees. The tranny runs hotter at constant higher speeds than in town.
Ambient outside temperature doesn't seem to affect the trucks temps.

That's exactly the Temps my 18 ran at normally.

The 2021 transmission temps are about the same but Ford has done something to adjust the engine Temps down from 208-216 to 188-196.

But it has an all new coolant loop.

Interesting... You have a 3.5 PowerBoost F-150 ? I wonder if the NON PowerBoost F-150's run that new lower engine temp?

There's a couple of fellas on here with 2021 non-Powerboost, so maybe they will speak up.

And yea, the lower Temps are actually in line with the Gen1 engine coolant Temps. Sure would be nice to know how and why Ford chose to go back to the 10-15° lower operating Temps. Modern fuel efficiency and EPA regulations would seem to support the warmer operating Temps.

Unless the hybrid side of things somehow negates the need to have the engine at a higher temperature? I looked around on the internet for a replacement thermostat for a 2021 but can't find anything yet. I was curious to see what temp options would be listed.

I assure you that your truck is absolutely working as designed. At least it is exactly as my Gen2 2018 performed for the 3 years 7 months I owned it.
That truck was 99% flawless.

^^ my 2019 3.5 reads pretty much as OP's as well. I do see engine temp get up to 220ish occasionally though on some of the long grades here in the West Coast mountains. I'm also on 35's though

My HD typically runs 197-199, up to about 203 towing.

2016 coolant runs at 195 to 205 without the trailer. 200-218 with the trailer on the flats, up to 235 in the mountains. Transmission temperature right at 201 without the trailer and the same 200-218 on the flats with the trailer (lags about 3 or 4 minutes behind when temps rise). 235 transmission temps in the Rockies have been observed...working hard.

My transmission temperature generally runs between 204 and 214 when towing. Not towing generally in the high 190's. I have a 2014 Supercab, 4x4, 3.5L, Max Tow, and HDPP. Cargo Capacity is 2286#.

On hottest days, mostly empty just me and a passenger, maybe 200 pounds in box and 100 in back floorboard, tranny stays 195 or less.

My engine is somewhere around 184 degrees when it’s warmed up. I have a 170 degree T stat though.

Most of us are using tuners to read it, or like a monitoring app on their phones or stuff like that.

Or if you have the appropriate gauge cluster you can enable the engine coolant and transmission temps on the dash in numerical value.

How are you guys reading engine temps? Never seen a readout on my 2014.
I used ForScan to display digital readings above my analog gauges. I have a Lariat, not sure what all dash clusters are capable of this.

Those are very similar temps to what my 2015 runs.

I did find it odd that when I had the flashing CEL and power was cut (from misfire on cyl3) that the truck was able to shed heat all the way down to 168* until the light stopped flashing - then it would return back to normal as power came back.

ECT 201 trans temp 158, this is on a 76 degree day and after driving about 20 minutes. I do not think I have ever seen 180 trans temp. KM
